Why is the shading in hard blocks instead of a gradient?
Because manga is printed in one colour of ink. There is no pale grey available on the page — only ink, paper, or a screentone pattern faking the middle. So the artist has to decide where light stops and shadow starts and cut it as a shape with a hard edge. That forced decision is why cel shading looks graphic and decisive, and why a soft airbrushed gradient instantly stops looking like manga.
