Why is the middle of each letter white rather than the neon colour?
Because that is what over-exposure does. A sensor or a strip of film can only record so much light per channel; once the brightest part of a magenta tube pushes every channel to its limit, red, green and blue all read at maximum and the result is white. The colour survives only where the light has fallen off enough to stay within range, which is why the hue appears as a ring around a blown-out core rather than filling it.
